Mini Key Lime Cupcakes
St. Patrick’s Day is right around the corner. Do you bake or make “green” food for St. Patrick’s Day? I usually bake a few treats for my family, this year I even decorated our Mantle.
These cupcakes are perfect for St. Patrick’s Day or even a yummy Springtime treat! I love turning a simple cake mix into a special treat.
Ingredients for Cupcakes:
• 1 box Yellow Cake Mix plus ingredients
• Or you can use one of the recipes from Cupcake Heaven
Ingredients for Topping:
• 1 box (4 oz) Vanilla Instant Pudding & Pie Filling
• 1/2 cups Whipping Cream
• 1/4 cup Key Lime or Regular Lime Juice (I used freshed squeezed)
• 4 drops of Green Food Color
• 1/2 cups Powdered Sugar
Ingredients for Frosting:
• 2 or 3 Egg Whites, depending on size
• 1/2 cup Powdered Sugar (add depending on how sweet you like it)
• Splash of Lime Juice
Directions:
Preheat oven to 350 degrees. Place cupcake liners in muffin tin. Mix cake mix and ingredients. Fill liners about 1/3 full using about 1 rounded tablespoon of batter. Bake for 12-16 minutes or until toothpick inserted in center of cake comes out clean. Cool cupcakes.
While cupcakes are baking, make the topping. In a large bowl, beat pudding and whipping cream with a wire whisk for 2 minutes. Let stand 3 minutes. Beat in lime juice and food coloring, stir in powdered sugar. Cover and refrigerate.
After cupcakes are cool and topping is chilled. Start the frosting (which is really not technically a frosting) Beat egg whites at high speed until stiff peaks form, gradually add powdered sugar and splash of lime juice. Beat well.
Assemble Cupcakes:
Remove paper liner from cupcakes. I was a little heavy handed and put too much batter in the liner, so I took a serrated bread knife and cut the top off of the cupcake. Place topping in decorator bag with a coupler only, no tip. If you don’t have a bag, use a Ziploc bag or just spoon the topping on. Add a small dollop of white (fluff) frosting. Decorate with a fresh lime if desired.

These were like eating a breath of Springtime, melt in your mouth good! I used a Butter Flavor Yellow Cake Mix and they turned out perfect, I think a White Cake Mix would give them a very fresh taste, too.
